Well, I’m in the middle of a Christmas stocking right now, so nothing to show just yet, but I wanted to show off a really tasty recipe I found on Pinterest. Fairly healthy and uber-yummy.
1)1 lb chicken breasts (I like to cut them in half, because otherwise the portion sizes are too big)
2)1 bag of frozen green beans (or asparagus, or broccoli)- fresh is preferred, but it’s no longer green bean season here! Frowny-face.
3) red potatoes- however many you can fit on the remaining side of the pan, haha.
4)Half a stick of butter, melted.
5) 1 packet of Ranch (or preferred flavor) salad dressing
SO- put the chicken in the middle of a 9×13 inch pan, with the green beans on one side, and the potatoes on the other. Sprinkle with the dressing, and drizzle the melted butter over the top. Cover and put in the oven for 1 hour at 350 degrees, and you’re finished! I’ve made this three times already- it’s so good!
